60ml/ 2 fl. oz vegetable oil
1.25kg beef, cut into 2.5 cm chunks
750g white onions, diced
1 tbsp unsalted butter
2 tsp sugar
2 tbsp plain flour
1.5 tsp thyme
3 carrots, sliced
1 bottle of Korev Lager
250ml beef stock
1 tbsp tomato puree
Salt and ground pepper
Using a large, heavy pot, warm the vegetable oil until hot.
Add the meat gradually, browning the meat well on all sides, then transfer onto a plate to cool.
Add the diced onions and butter to the pot, turn to a high heat and stir.
When the onions have softened, turn back to a medium heat and add the sugar, stirring until the onions are golden brown.
Add the flour, thyme and carrots, raising the heat to high for about 1 minute.
Add the Korev and allow to boil vigorously.
Stir in the beef stock and tomato paste.
Return the meat to the pot while still boiling, then reduce the heat to low, cover and simmer until the meat is tender for approximately 2 hours.
Season with salt and pepper and serve with warm bread.
